Thanksgiving Recipes: Garlic Mashed Potatoes



(About 6 servings, about 110 calories per serving)


Ingredients:

  • Extra-virgin olive oil, for drizzling

  • 1 head garlic, top sliced off

  • 4 lb. Red Bliss potatoes, peeled and chopped

  • kosher salt

  • 1 1/2 sticks butter, melted

  • 1 c. heavy cream, warmed

  • 2 tbsp. balsamic vinegar

  • 1 tbsp. Chopped fresh parsley, for garnish

Steps:

  1. Preheat oven to 400°

  2. Drizzle olive oil over top of garlic and warp in foil. Bake until golden and soft, 43 and 45 minutes, then then set aside.

  3. Add potatoes to a large pot and cover with water and season with salt, cover the pot and let it boil. After 30 minutes, check if the potatoes are soft then drain in a container.

  4. In a large bowl, smash the potatoes, then add butter, cream and garlic. Add balsamic, season with salt and garnish with parsley.
